Flavor Your Life

Summer is here and outdoor entertaining is in full swing. As part of the Flavor Your Life  campaign, I used European Extra Virgin Olive Oil aka liquid gold for a delicious appetizer that you're sure to love.   Here is a quick and easy recipe that would be perfect for all your outdoor summer parties and picnics. 

Creamy Avocado Crostini

Ingredients
1 cup extra virgin olive oil
1 ripe avocado
1/2 teaspoon garlic salt
1/2 teaspoon ground black pepper
2 tablespoons lemon juice
2 tablespoons chopped chives
1 small baguette, sliced diagonally



Instructions

  1. Preheat broiler on high
  2. In a large bowl, mix together the avocado, garlic salt, pepper, lemon juice, and chives.
  3. Add 2 tablespoons of extra virgin olive oil. Stir and mash until you have a chunky paste mixture.
  4. Lay out the sliced bread on a flat baking tray. Brush the remaining extra virgin olive oil on both sides of the bread.
  5. Toast on both sides until a light golden brown.
  6. While still warm, spread the crostini with the avocado mixture.
Servings : 16
